I’ve been obsessed with this quinoa salad ever since I first threw it together on a whim last summer! The sweet-tart pop of dried apricots against the nutty quinoa creates this amazing flavor combo that I just can’t get enough of, and the toasted almonds add the perfect crunch. It’s become my go-to dish for potlucks and meal prep because it tastes even better the next day.

Ingredients

For the salad:

  • 1 cup quinoa
  • 1/2 cup red bell pepper, diced into 1/4-inch pieces
